Craig Street’s signature, well-balanced English-style pale ale, brewed continuously since we opened, making this beer a staple in the Cowichan Valley region. It is a smooth amber coloured ale featuring caramel malt sweetness, notes of toasted bread, and a clean, balanced finish.

We use traditional hops that lean into earthy and herbal notes rather than hitting you with intense fruit or citrus. These varieties provide a gentle, woody spice that cuts through the sweetness of the malt. The result is a clean, reliable bitterness that stays in the background, making sure the finish is balanced and crisp.

The fermentation is driven by a classic ale strain that keeps the flavors tidy and approachable. It works to highlight the natural sugars of the grain while adding very subtle fruity notes—think of a faint hint of dried orchard fruit. This makes the beer incredibly smooth and easy to drink, bottle after bottle.

This beer’s backbone comes from a blend of grains kilned to bring out deep caramel and toffee sweetness. You’ll notice a distinct toasted bread aroma and a smooth, nutty finish with a hint of coffee right at the end. It’s a sturdy, malt-forward profile that gives the ale its beautiful amber glow and a rich, satisfying body.

By keeping the fermentation steady and controlled, we let the toasted malt and hop oils meld together perfectly. This “low and slow” approach prevents any harsh alcohol bite, resulting in a mellow, naturally rounded ale. It’s the process that ensures the clean, balanced finish we’ve been known for since we first opened our doors.
