We’ve balanced the bold malts with a selection of BC-grown hops, including Chinook and Willamette. These varieties introduce a “complex harmony” of pine resin and grapefruit notes, softened by a touch of dark fruit and floral spice. The result is a sophisticated, herbal aroma that cuts through the sweetness without overpowering the malt-forward heart of the beer.
Yeast
Fermented with our House “Chico” California strain, this yeast provides a clean and natural canvas that allows the ingredients to shine. It is specifically chosen for its ability to accentuate the hop profile just enough to keep the beer balanced. This reliable strain ensures a consistent, high-quality pour that stays true to the “bold yet smooth” character of a classic red ale.
Malt
This ale features a deep, complex grain bill combining Canadian and European malts with flaked oats and wheat. You’ll taste a layers of brown sugar, graham cracker, and toffee, with a smooth bready finish. The specialty malts give it a striking deep copper red colour and a rich, satisfying body that leans into a subtle chocolate and coffee sweetness.
Fermentation
The addition of flaked barley and oats during the process creates a distinctively silky and creamy mouthfeel. By managing the fermentation to maintain a medium-to-full body, we ensure the flavors of caramel and stone fruit are fully integrated.
